Picture yourself, your family and friends relaxing in an early 1900s Fredericksburg home; now picture dinnertime in one of the best restaurants in Central Texas. It must be The Nest, one of the Hill Country's premier destinations for casually elegant dining. It's the brainchild of John Wilkinson, who graduated from the Culinary Institute of America in Hyde Park, NY, spent time in a number of hotels and restaurants before honing his skills as Banquet Chef at the Ritz Carlton in Aspen, CO. He and his wife Monica moved to Fredericksburg and opened The Nest in 1995. Since then they have cemented their reputation, beginning with starters like fresh steamed mussels and fried oysters, moving on to entrees like broiled semi-boneless quail, roasted New Zealand lamb and broiled fresh Ecuadorian Tilapia. Accompanied by a full cellar of wines, and buoyed by dessert temptations like chocolate walnut tart and caramel flan, The Nest is a true Hill Country destination.
